Chris Roelli’s Dunbarton Blue – a white cheddar with delicate blue veining, bringing some delicate savoriness.

Shepherd’s Way Farms’ Hidden Falls – a sheep milk-based Brie with a delicate natural rind. One of the best non French versions out there.

Sequatchie Grove’s Cumberland – a cow’s milk Tomme inspired by the classic Tomme de Savoie of the alpine regions bordering France and Switzerland.
