Chef Amy’s Pinot Noir Salted Crackers

Chef Amy’s homemade crackers have garnered quite the following, so by request we’re sharing her recipe. This versatile cracker ecipe can be garnished with all sorts of salts and seeds… but our favorite are salted with beautifully tinted Pinot Noir salt. Goes great with cheese and charcuterie.

RECIPE

Chef Amy’s Pinot Noir Salted Homemade Crackers

INGREDIENTS:

2 cups Large-flake sea salt
Pinot Noir
4 cups of all-purpose flour
Olive Oil

I. PREPARE THE SALT
We used Maldon sea salt, but any large-flake sea salt will do nicely. Place 2 cups of the sea salt on a parchment-lined baking sheet. Put a cup of Pinot Noir into a spray bottle and spritz the salt lightly. Let dry. Repeat this process 3 or 4 more times, until the salt is bright purple.

II. MAKE THE CRACKERS

Preheat oven to 400. Mix 4 cups of all-purpose flour with 2 cups of very hot (nearly boiling) water. Add a tablespoon of salt and 2 tablespoons of olive oil. Mix until a smooth dough is formed. Let rest for 5 minutes. Roll out on a floured surface until very thin. If the dough is hard to roll, cover with a towel and let rest for another 5 minutes.  Once the dough is rolled cracker-thin, cut into 8 pieces. Place each piece on an ungreased baking sheet and sprinkle generously with Pinot Noir salt. Bake for approximately 10 minutes, until golden brown. Bake time varies a bit depending on how thin they’re rolled – you need to watch them the whole time to make sure they don’t burn. Cool and break into cracker-sized pieces.
