We produced this Oregon Sparkling Wine using 80% Pinot Noir and 20% Chardonnay fruit from our estate vineyards. We only make a sparkling wine in very cool years when we can pick later at full flavor development with lower sugar and lower potential alcohol.
We whole-cluster press and ferment the pinot noir fruit for our Oregon Sparkling Wine in chilled stainless steel tanks. The dosage for this wine utilizes our frozen-pressed Ultima. We finish the wine in a Brut style perfect for toasting any event.
